Broccoli Bake
½C crumbled saltine crackers
Preheat oven to 325. Sauté onion in 4 T butter, stir in flour, add water, cook until thick and bubbly. Remove from heat and blend in cheese then add to thawed broccoli in bowl, add beaten eggs, mix lightly to blend. Pour into greased 1½ qt pan, cover with crumbled saltines and dot with remaining butter. Bake 30-40 minutes until lightly browned.

Broiled Tomatoes
3-4large tomatoes
vegetable spray
Slice tomatoes into ½ inch thick slices. Place on a cooking sheet that has been sprayed with vegetable spray. Sprinkle with Parmesan cheese and place under broiler just until cheese melts.

Buttered Steamed Turnips
In a wide frying pan or electric frying pan over high heat, melt 2 tablespoons butter or margarine, adding 4 cups thinly sliced turnips and 5 tablespoons water. Cover and cook, stirring occasionally, for 4 to 5 minutes or until tender. Season with salt and pepper.
Serves: 6
Marinated Vegetables
Any vegetable of your choice
Mix first five ingredients thoroughly and pour over vegetables. Refrigerate over night.

Roasted Potatoes
Peel and cut into quarters the potatoes. Cook in salted water about 15 minutes. Drain. Spray baking dish with vegetable spray. Add potatoes pour cooking oil on top and mix well. Sprinkle paprika on top. Bake in a 350 degree oven for 30 minutes until crispy.

Rosemary Potatoes
Peel and cut into quarter the potatoes. Boil in salted water for 15 minutes. Drain water. Spray baking dish with vegetable spray and add potatoes. Pour cooking oil over potatoes and sprinkle with rosemary. Bake in 350 degree oven for 30 minutes until crispy. Stir often.

Fried Green Tomatoes
2-3 Green Tomatoes, sliced
Put flour in a bag, add a little salt and pepper, and shake the tomato slices to coat.
In a skillet, heat 2 T cooking oil and 2 T butter, add sliced tomatoes and cook slowly over low heat.

Creamed Cucumbers
Peel and slice cucumber. Soak overnight in salt water. Drain and rinse. Mix water, vinegar and sugar to taste. Add cream. Beat in sour cream and mayonnaise. Add cucumbers. Best if allowed to stand in refrigerator for a day before serving.
Corn Fritters
1C corn (from cob, frozen or canned)
Mix all the ingredients together. Blend. Drop batter by spoonful into skillet containing 1/2 inch hot oil. Fry until golden brown on both sides. Makes 12 fritters. Pour syrup over them for a treat.
