Lemon Bread

6Tbutter
1Csugar
2 eggs, unbeaten
Cflour
½tsalt
½Cmilk
1 grated rind of lemon
½Cnuts

Cream sugar and butter together.  Beat in eggs.  Sift dry ingredients together.  Beat
them into first mixture in 3 parts alternately with milk.  Stir in lemon rind and nuts. 
Bake in greased  8-inch loaf pan for 1 hour.  Remove from oven, do not remove from
pan.  Pour over topping of 1/2 cup sugar mixed with the juice of 1 lemon.  Let topping
run down the sides of the pan.  Let set for 10 min then gently remove from pan.

Gramma Thomas Dinner Rolls

¼Cbutter
4Cscalded milk
4 eggs
½Csugar
1tsalt
6 packages dry yeast
8Cflour
oil for bowl

Cut up butter in bowl and add hot milk.  When cool, add eggs, sugar, salt, yeast and 4 C flour.  Beat with beater to make a sponge.  Let rise 1/2 hour, then add rest of flour with a wooden spoon.  Add more flour if necessary to make a firm dough.  Roll out on floured board and knead again 
with hands. Grease inside of large, clean bowl with oil or margarine.  Place dough in bowl, turning dough over so the top of dough is oiled. Let rise again until double in bulk, about 1 1/2 hours.  Shape as desired and bake 15-20 minutes at 375 degrees.  I spray my baking pans with Pam.

Basic White Bread

This is a very basic recipe for white bread and probably simular to the one that comes
with your machine.  

1½ lb loaf     1 lb loaf
 3C  2Cbread flour
 3T  2Tsugar
t  1tsalt
T  1Tbutter
 ½C  ½Cwater
5/8C5/8Cmilk
t bread machine yeast

Please all ingredients in bread pan.  Select 'Basic Bake' or 'Regular Bake' with crust 'Regular' (4 hours), can be done on 'Rapid Bake (2 hours).  After baking cycle ends, remove from pan, place on rack and allow to cool 1 hour before slicing.

This is an egg bread so sweet it almost tastes like a pound cake.  It's easy to picture this
on a silver tray with a bowl of strawberries and a pitcher of cream.

1/3C  ¼Cbutter
 ¼C1/8Cheavy cream
 ¼C1/8Cwater

Place all ingredients in bread pan, select Light Crust setting and press Start.  After baking cycle ends, remove from pan, place on a rack and allow to cool for 1 hour before slicing.

Holiday Brown Bread

½Cmolasses
1 egg
Toil
1Cflour
1tbaking powder
½tbaking soda
  pinch of salt
½Craisins, plumped

Combine allbran and milk, then add molasses, egg and oil.  Sift & add the flour, baking powder, baking soda and a pinch of salt.  Stir only until well mixed, then add raisins.  Bake at 350 degree oven, approximately 30 minutes (use toothpick test).

Breads

Sally Lund Bread

2C lukewarm milk
2T sugar
½t salt
2eapkg of yeast
2eaeggs
4T soft shortning
C sifted flour

Combine the milk, sugar and salt.  Add 2 beaten eggs, yeast and soft shortning.  Mix in the sifted flour.  Beat until smooth, cover and let rise one hour until light.  Beat down pour into greased 10 inch tube tin.  Let rise about 45 minutes to within 1 inch of top.  Bake until golden brown & crusty for 45-50 minutes at 350 degrees.  Serve hot.

Hawaiian Sweet Bread

Black Forest Pumpernickel Bread

Directions: Use Light Crust setting Cool 1 hour before slicing. You can add 1 tsp. instant Espresso Powder for flavor. Bread may also be done on dough cycle, then finished in the oven.
Cranberry Nut Quick Bread

2ozorange juice, room temp 
1eaegg slightly beaten and room temp 
2T butter or margarine 
1C coarsely chopped fresh cranberries 
½C chopped walnuts 
1T grated orange zest (orange peel) 
2C all purpose flour 
1C white sugar 
t baking powder 
1t salt 
½t baking soda 

Measure orange juice, egg, butter, cranberries, nuts and orange zest into the bread pan, set aside. In medium bowl combine remaining ingredients and mix well; add to bread pan. Select Basic setting and press Start. Allow ingredients to mix 3-5 minutes until blended. Press Stop. Scrape down sides and corners of bread pan. Restart Basic setting and allow to mix 2 more minutes. Press Stop. Press Bake. Test for doneness at end of cycle, add more Bake time if needed. Let bread cool for 10 minutes before removing from bread pan.
English Muffin Bread

Note: Ingredients are for Large Loaf (about 1.5 lbs), adjust # of servings for Small loaf. 

Put all ingredients in machine in the order suggested by your machine's manufacturer and fire that bad boy up on the regular bread cycle. The top of the loaf should come out sunken, this is normal. The texture and taste is just like English Muffins, this is GREAT for toasting! 
Cinnamon Raisin Bread

1tground cinnamon     (¾ t)
tbread machine yeast(1½ t)
¾Craisins             (½ C)

Measure carefully, placing all ingredients except raisins in bread machine pan in the order recommended by the manufacturer.  Add raisins at the raisin/nut signal or 5 to 10 minutes before last kneading cycle ends. Select sweet or basic/white cycle. Use medium or light crust color.
Banana Nut Quick Bread

 2eaeggs, slightly beaten and room temp 
 2eamedium banannas, mashed 
1/3C butter or margarine 
 ½C chopped nuts 
 2T milk 
 2C all-purpose flour 
2/3C white sugar 
t baking powder 
 1t salt 
 ½t baking soda 

Measure eggs, bananas, butter, milk and nuts into bread pan. In medium bowl, combine remaining ingredients; mix well and add to bread pan. Select Basic setting, press Start. Allow to mix 3-5 minutes until blended. Press Stop. Scrape down sides and corners of bread pan. Restart Basic setting, allow to mix 2-3 more minutes, press Stop. Select Bake. Test for doneness when cycle is finished, add more baking time if needed. Let bread cool for 10 minutes before removing from bread pan.
Irish Brown Bread

Add all ingredients according to your machine instructions. Select light crust setting.
Whole Wheat Bread

Select Basic or Whole Wheat setting. 
Rye Bread

C refined rye flour 
 ½C whole wheat flour 
1/3C whole grain stone ground rye flour 
 2T powdered soy milk 
 2t yeast 
 1T caraway seeds 

Add ingredients to bread maker in the order listed. In my machine you add seeds when the timer rings so I hold them back. Use the smaller amount of liquid and add more if needed (I used 12 1/2 oz today). Hit whole wheat button. Add seeds when appropriate.
