Pork Chops Chasseur

 1 16 oz can tomatoes
 6 pork chops
 1Ccream mushroom soup
1/3Cchopped onion
 2tprepared mustard
 ¼tpepper
 ½Cdill sweet pickle
 3Chot cooked rice
 2Tparsley

Drain  tomatoes  (reserving  1/2  c  liquid)  Cut  up   tomatoes.  In skillet  brown chops. Pour off fat. Add soup,  tomato  liquid, onion, mustard and pepper.  Cover, cook over low heat 30 minutes or until  done.  Add tomatoes and pickles heat/   Combine  rice  and parsley. Serve chops over rice.

Baked Pork Chops

 6  slices of bacon coarsely chopped
 1lbpotatoes pared and sliced 1/3 in thick
 1lbonions sliced 1/3 in thick
 1lbcarrots
 6  pork chops
 1  can beef broth
 3T sherry
t ginger
 3  medium cloves of garlic minced
1/3C unsifted flour
 1t salt
 ½t pepper
 ½C heavy cream

350 degree oven.  Scatter bacon over bottom of Dutch oven.  Layer next four ingredients.  In small bowl combine next four ingredients.  Pour over chops.  Cover skillet.  

Bake 1 hour. Increase oven to 375 degrees.  Bake 12 min more uncovered.  Skim off fat and reserve liquid. (1 cup) In small saucepan over heat combine next 3 ingredients. Gradually whisk in cream.  Add reserve liquid. Bring to boil 1 min.  Pour sauce over chops.

Pork Chops with Cabbage

4 chops
1tginger
dsalt and pepper to taste
2Toil
½ head medium cabbage(shredded)
1 onion sliced
2Cbeer

Sprinkle  pork  with  ginger, salt,  pepper.   Heat  oil in  large skillet.   Add chops and brown on both sides.  Remove to a  plate and set  aside. Sauté garlic and onion until golden.  Add cabbage and sauté 2 minutes.  Return chops to pan and cover with cabbage.  Add beer bring to a boil.  Reduce heat to low and cover.   Simmer 45 minutes.

Smothered Pork Chops

4 pork chops
1tsalt
1tdry mustard
1Tlemon juice
4Tmargarine
1 medium onion chopped
1 large can tomatoes

Rub chops on both sides with salt, mustard and lemon juice; let stand for 30 min.  Melt
margarine in skillet; brown chops on both sides. Add onions let cook a few minutes over medium heat until transparent.  Add tomatoes with liquid.  Cover and simmer until tender, about 20-30 min. If sauce becomes too thick or starts to separate add a few tablespoons hot water.  Serve immediately.

Maple Mustard Ham Steak

¼C Prepared Mustard
¼C maple-flavored syrup
1T cider vinegar
1lbham steak

Blend mustard, syrup and vinegar in small bowl; set aside.

Grill or broil ham steak 3 minutes on each side. Brush with 1/4 cup mustard mixture; cook 1 to 2 minutes more on each side. Serve ham steak with remaining mustard mixture.
